Chicken

I am enjoying making all kinds of yummy things...maybe a LITTLE too much. About a month ago I found this chicken recipe online, we tweaked it a little bit and now I think it's our all time favorite dish!

2 chicken breasts
1/2 cup chopped onion
1/2 cup chopped green pepper
1 roma tomato
1 T. olive oil
1 T. chili powder
1 teas. garlic salt
Extras: sour cream, jalepeno pepper, hot sauce
Cut chicken breasts into small slices. Cover with chili powder. Cook chicken in pan with heated oil. Add peppers, onions, tomatoes, and any other veggies you desire. Add garlic salt and a little more chili powder. Stir together until veggies are cooked. Pour over a generous helping of rice and enjoy :)
You can add sour cream and chips to the ordeal but I promise it's really flavorful just like that! Oh and you can add hot sauce when adding the other spices.

Weekend Getaway

James and I drove to Ely for the weekend - where is that you might ask? Why, it's in the state of Nevada! One of my VERY favorite people lives there. Her name is Candice and she's actually my cousin. She's married to the coolest guy ever (besides my cute hubby) and I LOVE to play with them! And to be quite blunt, they LOVE to play with us too.

We spent the weekend getting stuck in snow drifts and eating until our stomachs told us to STOP! It was TOTALLY a blast and I can't wait until our next get together with them (which I think will be...in a few weeks, YES!)

Not good...

For the last five months, all I've wanted to eat is these...
and these - I couldn't get enough of either!


All of a sudden, the last couple of weeks, all I want is this....

Yup...chocolate...chocolate ANYTHING. Chocolate cake, brownies, chocolate chip cookies, and I would absolutely LOVE a Tastykake from back East - Fudge Bar or a Kandy Kake!

Things that I LOVE...

- Talking to my insurance and finding out I owe less than I thought AND the girl was super nice to me.
- Having two awesome songs play back to back on my way to work - what a better way to get pumped for work? (try singing at the top of your lungs and doing your hottest dance moves in the car - it's the BEST!)
- Having my husband tell me I'm SO hot :)
- Feeling like I actually accomplished something at work today instead of feeling like a complete failure.
- And finally...coming home and eating a spoonful of peanut butter covered in chocolate chips (don't judge me, it's DELICIOUS!)

Holiday Rundown

We had a bunch of family parties/dinners with James's family before Christmas.
We drove to Idaho for Christmas - stayed up too late and ate WAY too much!
(going home is like my ALL TIME FAVORITE!)
James loved one VERY specific present.


I loved this VERY specific present (I now can make my Mom's yummy treats anytime I want!)


We had our FIRST New Year's Eve Party as a married couple - this is who came!
(One couple is missing - they had to leave early)

Some of us got a little rambunctious.


We shot off poppers, screamed, and had a toast with delicious sparking white grape juice at midnight! (AND kissed with poprocks!)


And this morning my hubby INSISTED that I spend one of my last vacation days relaxing and he cleaned up the aftermath of our party - how did I get that cute boy to choose me? :)


Ah...Happy freaking New Year! May all of your resolutions ACTUALLY come true this year. Mine is to gain between 20-25 lbs...suckers! :)
